What are the Fastest Growing Vegetables Indoors?
Growing vegetables indoors isn’t always that easy. The lack of natural light can slow down the most determined of plants. But if you keep them somewhere where they can easily access light – like the windowsill, you can grow vegetables indoors in under 30 days no matter the season. In this article I’m going to take a closer look at the fastest growing vegetables indoors.
The fastest growing vegetables indoors in under 30 days include microgreens like cress, along with radishes, salad leaves and lettuce, baby kale and spinach.
You can grow these vegetables in containers or trays on your windowsill, or in another sunny spot. Use light potting soil or compost with good drainage that’s suitable for indoor planting.
It’s not an exaggeration to say we are living in turbulent times. None of us know when food prices are going to come down, or if we are going to be able to access resources as easily as we have in the past.
So, it’s definitely a bonus to make the most of your indoor space and learn how to grow the best vegetables so you can feed yourself and your family.
Without further ado, read on for my pick of the crop (no pun intended) of the fastest growing vegetables you can grow indoors in 30 days and under…

Fastest Growing Vegetables Indoors: Microgreens And Sprouts

Grow Time: One to three weeks
Microgreens and sprouts come in at top place for the fastest growing vegetables indoors!
Sprouts grow incredibly quickly in as little as under one week, while microgreens can take one to three weeks.
The difference between sprouts and microgreens is that microgreens are grown in soil, while sprouts germinate in water.
And, remember that with microgreens, you eat the whole lot, whereas with sprouts it’s just the stem and seed that can be eaten. Examples of sprouts include mung bean sprouts which grow in just a few days, as well as wheatgrass and corn shoots.
Fastest Growing Vegetables Indoors: Radish (The Root Vegetable)

Grow Time: Three weeks
Who doesn’t enjoy a tasty radish? They also liven up your living space, as a splash of colour among all of those green plants growing on your windowsill. ‘
Smaller radishes can mature within just three weeks, but larger ones could take a couple of months.
One bonus for indoor growers is that radishes need some shade, so you can leave the sunnier spots for your other plants where space is limited.
Remember that radish sprouts can also be grown indoors (see the microgreens and sprouts section above).
Fastest Growing Vegetables Indoors: Baby Kale

Grow Time: Around three to four weeks
Baby kale grows very fast from seed and you should expect to be able to add it to your salads and stir fries at around three to four weeks after planting.
Packed with antioxidants and vitamins, kale will leave you brimming with vitality. You can have your very own mini kale salad bar to access any time you wish on your windowsill!
Fastest Growing Vegetables Indoors: Salad Leaves And Lettuce

Grow Time: About 30 days
I’m a big fan of growing salad and lettuce because they seem to survive all seasons. In the UK we’ve had some really crazy weather over the last couple of years – yet miraculously my salads and lettuce selection stayed strong.
No matter how much wind and rain battered them and excessive heat waves dried them out, my salad leaves and lettuce seemed to fare pretty well.
I was actually away during the fiercest of the heatwaves and kept them on my balcony outside as I’d hardened them off after a period indoors. When I came back I was expecting them to have completely shrivelled up (like other plants I had), but I was lucky to find them still thriving!
Lettuce and salad leaves should also do well indoors as long as they have access to some kind of light.
Natural light accessible by the windowsill is always best, but in winter you could use LED lights .
Another benefit of planting seeds indoors before transplanting them, is that you can start them off in trays and then pick the best ones to transplant to bigger pots.
In most cases, you should see shoots pop up in less than a week and most salad leaves are ready to pick in around a month.
There are some salad leaves you can grow over and over again – all you need to do is to pick the outer leaves and leave the rest to grow. Just remember to immerse your leaves in freezing ice water after picking so you can get rid of any dirt and potential bugs.
List of (non-head) lettuce and salad leaves to grow indoors all year-round:
- Arugula
- Merlot
- Red Salad Bowl
- Green and Red Mixed Salad Bowl
- Green Oakleaf Variety
- Black Seeded Simpson
Fastest Growing Vegetables Indoors: Spinach

Grow Time: Around 30 days
Spinach is similar to lettuce and salad and can be grown indoors in around a month.
It does well in cooler weather, but still needs access to a steady stream of light. However, like radishes, you should keep your spinach in partial shade.
Can You Grow Fast-Growing Vegetables in Containers?
You absolutely can grow fast-growing vegetables in containers – but remember that if you are sowing them indoors they may take up considerable space in comparison to trays.
But, if you are lucky enough to have the space inside your house or apartment for pots and containers, by all means go for it!
Containers can be easier on the eye than module trays and add colour and character to your indoor area – just be sure to make sure you get containers that are good for drainage.
Fastest Growing Vegetables Indoors: Final Thoughts
I hope you’ve enjoyed this article about the fastest growing vegetables indoors in 30 days or under.
Growing vegetables on a windowsill or in an inside area can be fun and easy if you know which plants to choose.
After all, it can be challenging to grow longer-to-harvest vegetables like garlic and onion inside – but salads, lettuces, microgreens along with the others on this list are a great option for those looking to grow vegetables in less than a month.
If you feel that some of these vegetables don’t work for you, you can always swap them out and add another. After all, most of gardening is about trial and error. Patience is most definitely a virtue!
